Smoked fish platter for guests: quantities, sides, process

Peppered hot-smoked salmon strips as the centrepiece of the smoked fish platter

Planning a smoked fish platter comes down to three numbers: 80–100 g of fillet per guest (starter/buffet), three to four varieties from mild to strong – and smoking the day before, as the flavours harmonise overnight. The rest is staging: alternate light and dark varieties, use lemon and dill for a pop of colour, and serve horseradish and bread as mandatory sides.

The platter formula

Component Recommendation Amount for 8 guests
Mild Trout fillets 6–8 fillets
Juicy Hot smoked salmon (Stremellachs) 600–800 g
Strong (Pepper) mackerel or eel 2 mackerels / 400 g eel
Raw contrast Smoked salmon or gravlax 300–400 g
Sides Horseradish, lemon, dill, bread, butter, egg plenty

The schedule: The day before – smoke the fish, let it cool, cover and refrigerate (the smoke notes round off overnight). Serving day – slice cold smoked varieties thinly, refresh hot smoked pieces for 15 minutes at 60–70 °C until lukewarm, arrange. Rule of thumb for arranging: place large pieces first, fill gaps with fillets, sides on the edge – and only peel the skin off the trout at the table, this keeps them juicy.

On quantities: Home-smoked fish disappears faster than shop-bought – 80–100 g per guest is the lower limit. If you're firing up the smoker anyway, smoke a reserve tier: leftover hot smoked salmon is the best pasta addition for the following week.

Frequently asked questions about the fish platter

How long can the platter sit out?

Once arranged, it should be eaten within 2 hours – smoked fish is a fresh product. Less time in summer heat; refrigerate leftovers immediately and consume the next day.

Which wine or beer pairs well?

Classic: dry Riesling or Silvaner with the fish, light beer for a rustic gathering. With strong eel and pepper mackerel, a Pinot Gris works well.

How many fish do I need to smoke for this?

For 8 guests, one Smoky 5 run (up to 18 fish) is easily enough – including reserves. The capacities of all smokers can be found in the capacity guide.
