Farm shop & direct marketing: increase margins with smoking

For direct marketers, smoking is the classic margin lever: raw ingredients become refined products with their own price, their own story and a loyal customer effect. The proven growth path: start with the F2-70/60 XL (80–100 kg per batch), a range of bacon, ham and smoked trout throughout the season – and if successful, step up to the F4 professional class. The Reschauer family shows that this model works: a small shop, in-house processing, and customers from Passau to Austria.

Reading tip: The big sister to this article is the butchery system planning – where you will find the Reschauer case, program control and HACCP in detail.

Why refining carries the farm shop margin

Three effects work together: the refinement premium (smoked goods achieve a multiple of the raw ingredients), customer loyalty (home-smoked is only available here) and utilisation (graded goods become premium products). Then there is the scent factor, which retail has long used: where smoking happens, customers stop. If you slice your own ham in the shop, you are not selling goods, but the story of the farm – the strongest argument against any price comparison.

The seasonal range: The farm shop smokes with the calendar – bacon and ham from the slaughter season (October–March), smoked trout all year round as a freshness anchor, cold-smoked salmon and smoked cheese as gifts for Christmas, hot-smoked salmon and smoked chicken for the barbecue counter in summer. This keeps the smoker busy and the range tells the story of the year.

The technology ladder: Start with the XL (2,698.92 €) for weekly batches; add a smoke generator for ham and bacon. As sales grow, the F4 (220 fish/160 kg) with program control follows – and if you put dried goods (jerky, dried fruit) on the shelves, add the TF drying cabinet.

Law & deadlines in direct sales

Commercial production means: registration with the veterinary office, HACCP self-monitoring, clean labelling – smoked fish carries a use-by date, long-life goods a best-before date. The deadlines themselves are sales arguments: freshly smoked trout (3–7 days) sets the pace for the Thursday smoking day before weekend sales, whole ham keeps for months in the shop. The documentation practice with templates and program control is in the HACCP guide; the deadlines in the shelf-life table.

Frequently asked questions about farm shop smoking

How much time does smoking take alongside running the farm?

Surprisingly little with regulated technology: brining and drying run alongside, the smoker maintains the temperature itself. A fixed smoking day per week (e.g. Thursday for weekend sales) is the proven model.

What sells best in the farm shop?

The classics: bacon and ham in one piece, smoked trout fresh and vacuum-packed – plus seasonal rotation. Long-life goods sold in one piece keep longer and look more premium than cold cuts.

Do I need a separate smoking room?

Recommended: a washable room with exhaust air, separate from the sales and living areas. Thanks to removable attachments, the smokers also fit into existing buildings – the installation practice is in the system planning.
