Food Truck & Catering: Mobile Smoking Technology in Action

Beelonia swivel grill in catering use with sausages and steaks

Mobile smoking and grilling rely on three qualities: gas-compatible (electricity is a gamble at events), robust (every setup and teardown is a stress test), and quick to clean (hygiene between two locations). This is exactly what the Beelonia range is built for: gas-powered smokers from Smoky to F2-70, swivel grills and large-capacity grills for the show, the stool burner for side dishes – all V2A stainless steel (AISI 304), all from a single production line.

Reading tip: The bestseller for the event business is pulled pork – the production is explained in the 16-hour recipe: pre-produce, regenerate on site.

The production logic in the event business: Long processes run at home – pulled pork overnight, ribs, hot-smoked salmon. On site, it is regenerated, briefly smoked again, and served fresh. The mobile smoker takes over the live component: scent and show are the best marketing a stand can have – the same experience that supermarkets with fish counter smoking also have.

Transport and setup: The smokers stand on solid feet or base frames, doors and attachments can be dismantled – what is intended for bringing into buildings also helps with loading. Wheel sets for swivel grills (from €69.42) and the compact dimensions of the Smoky series (38×50 cm footprint) make logistics plannable. Gas appliances come with a hose and pressure reducer for standard propane cylinders.

Hygiene & law on the road

Commercial food distribution also means mobile: self-monitoring, cold chain, core temperature documentation – the EU hygiene rules travel with you. In practice, this means: a penetration thermometer and simple temperature logs belong in every truck, pre-produced goods travel chilled and are regenerated to safe core temperatures on site (poultry 72 °C+). The V2A stainless steel (AISI 304) surfaces of the appliances are the hygiene advantage: quickly cleaned, no coating that ages – the HACCP article provides the framework.

Frequently asked questions about mobile smoking

Am I allowed to smoke in the food truck?

Live smoking in the vehicle requires clean exhaust air routing to the outside – many solve this with the smoker next to the truck. The 130 mm exhaust takes standard pipes; the location principles apply as in the article Setting up a smoker.

How much gas does an event day consume?

An 11 kg propane cylinder carries a typical event day with a smoker and burner – with a reserve cylinder, you are safe. Gas appliances run with any standard pressure reducer setup.

Is the swivel grill really worth it for catering?

It is the sales magnet: an open fire draws a crowd, and the large grate area (tub up to 2,000 mm) serves queues. With spit and kettle attachments, it becomes a complete outdoor kitchen.
