Scalding kettle & butchering kettle: Selection guide for businesses
The kettle is the second pillar of classic meat refinement: after smoking comes scalding, boiling, and making aspic – and for this, Beelonia GmbH builds four kettle lines: the affordable sheet steel kettle stove (from 1,604.12 €), the electric mini kettle (80–100 l), the butchering kettle multi-fuel burners in round and square, and the double-walled glycerine kettle to prevent burning. The choice comes down to three questions: how much volume, which heating method, and how delicate is the food?

Which kettle for which purpose?
The heating depends on the location, the volume on the batch, the design on the food. For classic home butchering in the yard, the wood-fired multi-fuel burner is the standard – robust, electricity-free, with firing comfort for long cooking days. Businesses with continuous operation and indoor installation choose electric or gas with precise control. And if you are cooking aspic, black pudding, or mulled wine in a jacketed kettle, you reach for the glycerine kettle: the heat transfer medium in the double jacket distributes the heat so evenly that nothing sticks – optionally with an agitator (1,520.82 €).

Keep kettle accessories in mind: bottom grid (prevents sticking to the kettle bottom, from 280.84 €), aluminium float (keeps the scalded food under water, from 583.10 €), water inlet (280.84 €), and for precision work, the core temperature control (999.60 €), which guides scalded sausage exactly to 72 °C. As with the smoker: everything is available individually, everything is replaceable.
Kettle plus smoker = the classic combination: hot smoking and subsequent scalding (Krakauer, Wiener) requires both devices – or the KR6 boiling and smoking unit, which combines both processes in one system.
Frequently asked questions about buying a kettle
Why 'multi-fuel burner'?
Because the furnace burns any solid fuel – logs, briquettes, coal – and therefore works anywhere there is fuel but no power connection. The most flexible solution for farms and festivals.
Can I also cook mulled wine or soup for festivals in the kettle?
Yes – clubs and caterers regularly use the kettles for festival operations; the glycerine kettle provides burn protection for anything containing sugar. Clean thoroughly as usual after contact with food.
How long does a Beelonia kettle last?
Like the smokers: decades – the kettles come from the same production in Beelen, with spare parts (grids, floats, agitators) straight from the factory. Kettle building is even in the company logo: 'Grill- und Räuchertechnik, Koch- und Brühkessel'.
