Fishing club: The right club smoker

A club smoker needs to do three things: offer plenty of capacity for the smoking festival, withstand robust use by many hands – and, if in doubt, run where there is no electricity. The standard for this is the F2-70/60 XL: 120–130 fish per batch, double-walled, with a gas option for off-grid locations. Smaller clubs start with the Smoky 6 or F2-70. And because club equipment has to last for decades: V2A stainless steel (AISI 304) and spare parts availability are not optional extras here, but a requirement.

Reading tip: The logistics of catch day – cold chain, express brine, daily schedule – can be found in the article Smoking fresh catch.

The club size question: How much smoker does the club need?

Club size / Occasion Recommendation Capacity Price from
Regulars' table, waterside smoker Smoky 6 approx. 25 fish 706.86 €
Medium club, regular events F2-70 45–60 fish 1,799.28 €
Smoking festival, large membership F2-70/60 XL 120–130 fish 2,698.92 €
Fish farming cooperation, sales F4 upwards from 220 fish 7,457.73 €

Rule of thumb for the festival: Number of expected eaters × 1 trout, divided by the smoker capacity = batches. With the XL and staggered brining, 250–400 trout on the festival day are realistic – two to three batches, while the next load is already drying.

Gas makes you independent: Many clubhouses and waterside spots have no (reliable) power supply – which is why the gas version is the club classic: 8 kW burner for the XL models, supplied with hose and pressure reducer for any propane gas cylinder. Full heating power, anywhere. And thanks to the interchangeable system, the club can later switch to electric when the new clubhouse has power – without needing a new smoker.

Club equipment means sharing responsibility: Many hands operate it, no one feels responsible – that's why robustness counts: V2A stainless steel (AISI 304) doesn't rust, the insulated door is forgiving, and wear parts like grates, hooks and seals are available individually from the factory. A laminated short protocol on the smoker (brine %, times, target temperature) keeps the quality constant, no matter who is smoking.

Purchasing in the club: Financing & care

Clubs typically finance the smoker via levies, festival proceeds or funding pots – and quickly amortise it through smoking festivals. Important for the board: The smoker is a purchase for decades; the spare parts question determines the true lifetime costs (see why old Beelonias keep running). For care, routine is enough: grates after every festival, deep cleaning annually, rain cover against the weather.

Frequently asked questions about the club smoker

Is one batch enough for our festival?

Rarely – plan in waves: While batch 1 is smoking, batch 2 is drying and batch 3 is in the brine. With this staggering, even one XL continuously delivers fresh fish throughout the festival day.

Can several members work at the same time?

Yes – the division of labour brining/drying/smoking/serving is the proven club workflow. The large door and seven tiers of the XL make loading easy for two people.

What does a club smoking festival cost in materials?

Besides the fish: smoking dust (a 15 kg bag covers several festivals), salt for the brine and gas – together usually under 50 € per festival. The margin for the club coffers is correspondingly attractive.

Reading tip: For clubs with sales ambitions (fishing festival, farm festival), it is worth looking at direct marketing with smoked goods and professional system planning.
