Fishing season: smoking your fresh catch directly
From the water to the smoke on the same day – that is the ultimate discipline of the fishing season, and it succeeds with three rules: a cold chain from the bite, gutting as early as possible, and a well-timed brine. The classic process remains the overnight brine with smoking the following day; if you want to eat your catch that evening, you work with the express method. It doesn't get any fresher – and exactly this freshness advantage is the taste difference to any bought smoked fish.

From the bite to the brine: The cold chain rules
Fresh fish spoils faster than any other food for smoking – in summer temperatures, hours count. Therefore: humanely dispatch the catch, gut it as soon as possible (gills and intestines are the spoilage accelerators) and put it in the cool box with ice. The water bucket in the sun is the sure way to soft, bland fish. If you only gut at home, rinse the abdominal cavity thoroughly with clear water and completely remove the kidney (the dark strand along the spine).
The daily schedule: Caught in the morning, smoked in the evening
| Time | Step | Note |
|---|---|---|
| 07:00–11:00 | Catch, dispatch, cool | Cool box with ice to the water |
| 11:00–12:00 | Gut, clean, prepare brine | Express: 7–8% instead of 6% brine |
| 12:00–17:00 | 4–6 h in the cool brine | Classic: overnight 8–12 h at 6% |
| 17:00–18:00 | Rinse, dry until the skin is leathery | Do not skip the pellicle |
| 18:00–19:30 | Cook at 90–110 °C, then smoke until golden yellow | Core temperature 60–65 °C |
| from 19:30 | Eat – or air out overnight | Even more well-rounded the next day |

The express brine explained: A stronger brine (7–8%, i.e. 70–80 g salt per litre) over 4–6 hours salts smaller trout all the way through – the result is good, but the classic 6% overnight brine remains more even. If you plan both, smoke the Sunday catch on Monday evening and only take the "tasting fish" into the express round. Very important in both cases: spread the belly flaps with a toothpick so that the abdominal cavity dries out too and takes on colour.
The angler's smoker: At club waters, the Smoky series has established itself – compact, made of V2A stainless steel (AISI 304) and completely independent of electricity with the gas heating block (4 kW). For the family catch, the Smoky 5 (approx. 18 fish) is sufficient, the Smoky 6 (approx. 25 fish) brings reserves and the better hanging height. Clubs with a smoking event reach for the F2-70/60 XL with 120–130 fish per run.
Which fish from German waters are suitable?
Trout and char are the rewarding classics; eel is the king, mackerel the coastal favourite – and even whitefish like bream are underestimated when smoked. High-fat species are more forgiving (see eel guide), lean ones like pikeperch need shorter cooking phases and lower temperatures. The same chain applies to all: cool, salt, dry, cook, smoke – only the times scale with size and fat content.
Frequently asked questions about smoking your catch
Do I have to scale the fish before smoking?
No – the scales stay on and protect the skin during smoking. Just clean thoroughly and rinse the abdominal cavity; the skin is peeled off or eaten anyway after smoking.
Can I smoke a frozen catch later?
Yes – freeze cleanly gutted, thaw gently in the fridge, then process like fresh. This way, a big fishing day is spread over several smoking weekends.
How many fish fit in one run?
Rule of thumb: as many as leave two fingers of space between the fish – otherwise the colour will be patchy. The Smoky 5 manages approx. 18, the Smoky 6 approx. 25 trout; all capacities are in the capacity guide.
Reading tip: Special features apply to catching in summer – see smoking in summer; the shelf life of the finished fish is regulated by the shelf life table.
Ready for the season?
Smoky smokers, fish hooks and RÄUCHERGOLD – the angler's equipment from Beelen since 1880. Also independent of electricity with gas.
