Smoking Landjäger & raw sausage: guide + spice basics
Landjäger is the supreme discipline of raw sausage in a small format: sausage meat made from beef and pork belly, filled air-free, pressed, fermented (pH below 5.3 in the first few days), then 2–4 cold smoke cycles and drying until firm enough to slice. Raw sausage remains raw – safety comes from the hurdle interplay of nitrite curing salt, acidification, drying and smoke. This is exactly why a coordinated spice mixture like Rohwusal Landjäger Extra (€23.99) relieves beginners of the most critical source of error: the dosage.

The five stages of raw sausage
| Stage | Conditions | What happens |
|---|---|---|
| 1 · Sausage meat & filling | Meat well chilled | Knead intensively until sticky – the binding is created |
| 2 · Pressing | Between boards | The typical square Landjäger shape |
| 3 · Reddening/Fermenting | 1–3 days, 18–22 °C, humid | pH drops below 5.3, colour turns red |
| 4 · Cold smoking | 2–4 cycles of 8–12 h, 15–25 °C | Aroma, colour, surface protection |
| 5 · Drying | 12–15 °C, airy | 30–40% weight loss → firm to slice |

Why the pH value is half the safety: Raw sausage is never heated – in the first 48–72 hours, the nitrite alone protects it, after which acidity and drying take over. The lactic acid bacteria (from starter cultures or the ripening flora) lower the pH below 5.3; this is exactly where the sausage meat releases its water best, the sausage dries quickly and becomes firm to slice. Too warm or too fast ripening, on the other hand, produces off-flavours – therefore, stick to the climate stages.
The casing also decides: For all smoked, dried sausages, you need smoke- and water-permeable casings – natural casings or fibre-reinforced smoking casings. Plastic casings for scalding are wrong here: the smoke wouldn't get in, the moisture wouldn't get out.
Cold smoking and drying: The rhythm
Smoking is done in cycles: 8–12 hours of cool smoke, then at least as long a fresh air break – a total of 2–4 cycles. The breaks are not idle time: the smoke penetrates, the surface dries off, the aroma harmonises. Afterwards, the Landjäger hang in an airy place at 12–15 °C until the scales show a 30–40% weight loss – depending on the calibre, one to two weeks. The F2 with its hanging height and the cold smoke insert covers both phases; if you dry and smoke at the same time, add the drying cabinet.
Frequently asked questions about Landjäger & raw sausage
Why does my raw sausage become porous inside?
Air pockets during filling or too little kneading – the sausage meat must bind stickily and go into the casing air-free. A vacuum filler or careful manual stuffing with repressing solves the problem.
Can I make Landjäger in summer?
Not sensible – fermentation and cold smoke need cool, controlled conditions. Raw sausage is a project for October to March, like the entire cold smoke calendar in the article Smoking in winter.
How long do finished Landjäger keep?
Well dried, they can be stored for weeks – cool, dry and airy, not in plastic. The further dried, the longer the shelf life; the rules are in the shelf life table.
