Smoking mackerel: fast, fatty, aromatic

With around 12% fat, mackerel is the ideal after-work fish for smoking: it forgives temperature fluctuations, is ready in 60–90 minutes and tastes best warm straight from the smoker. The process is the same as for trout: 8–12 hours in a 6% brine, 30–60 minutes of drying until leathery, cooking at 90–110 °C (core temperature 60–65 °C) and smoking until golden yellow. Its fat makes it juicy – and the perfect beginner's fish after trout.

Reading tip: The step-by-step basics with all the details can be found in the trout guide – mackerel follows the same process.

Why is mackerel so forgiving?

Fat forgives: At ~12%, mackerel sits between trout (2–3%) and eel (24.5%) – it hardly dries out, absorbs smoke intensely and stays juicy even with minor temperature mistakes. It is also inexpensive, available all year round as fresh produce and, at 300–400 g, fits perfectly on a single hook. For coastal holidaymakers and North Sea anglers, it is the classic anyway – but even from the fish counter, it is more worth smoking than almost any other bought fish.

The quick guide for after work

Step Values Time
1 · Brining 6% (60 g/l), cool 8–12 h (overnight)
2 · Drying until the skin is leathery 30–60 min
3 · Cooking 90–110 °C until core temperature 60–65 °C approx. 30–45 min
4 · Smoking lower temperature, beech smoking dust 30–45 min until golden yellow

The right hold: Mackerel hang best on the 5-prong fish hook (€5.36) – the prongs grip the fish securely behind the gills, and the soft meat doesn't tear during cooking. For heavy specimens from 500 g, use the large double hooks. Leave two fingers of space between the fish, otherwise the colour will be patchy.

The number one mackerel mistake is too much heat: above 110 °C, the abundant fat melts suddenly, the skin tears and the juices run into the fat tray. Cook moderately, then smoke mildly – the golden yellow colour comes from the smoke, not the heat. And as with all fatty foods: use a drip tray, because mackerel fat in the embers smokes bitterly and is a grease fire risk.

Serving and using

Mackerel tastes best lukewarm – classically with bread, horseradish and lemon; cold the next day, it is the base for mackerel pâté and salads. Like all hot-smoked fish, it is a fresh product: chilled for 3–7 days, vacuum-packed for longer – the rules are in the shelf life table. The smoke notes harmonise overnight; if you are smoking for guests, smoke the day before and serve refreshed lukewarm.

Frequently asked questions about smoked mackerel

Can I use frozen mackerel?

Yes – thaw completely in the fridge and process like fresh. Frozen goods from the counter are often frozen fresher from the sea than 'fresh' ones – completely equivalent for smoking.

How do I make peppered mackerel myself?

After drying, sprinkle the still slightly damp fish generously with crushed pepper, then cook and smoke as normal. The pepper sticks to the pellicle and roasts in the smoker.

Why does my mackerel taste rancid?

Stored too old or too warm – mackerel fat oxidises quickly. Only smoke fresh or freshly thawed goods and consume them promptly; rancid notes are a freshness mistake, not a smoking mistake.
