Smoking vegetables & tofu: Vegetarian from the smoker

The vegetarian smoking kitchen follows a simple rule: vegetables are hot smoked (80–110 °C, 30–60 minutes) like a side dish from the grill, tofu either cold for a firm bite or warm for a tender one – and the smoke here is pure seasoning, not preservation. No curing, no core temperature requirement, hardly any risk: the most relaxed chapter of smoking, with results that elevate every bowl and grill buffet.

The vegetable table

Vegetable Preparation Temperature Time
Peppers (halves) oiled, salted 90–110 °C 30–45 min
Onions (halves) oiled 90–110 °C 45–60 min
Mushrooms (whole) dry, oiled 80–100 °C 30–40 min
Aubergine/Courgette 1 cm slices, salted 90–110 °C 30–45 min
Tomatoes (halved) salted 80–90 °C 45–60 min
Tofu (firm) pressed, marinated cold <25 °C / warm 60–80 °C 2–3 h / 45–60 min

The tofu trick is pressing: Firm plain tofu is weighed down between kitchen paper for 30 minutes – only then does it really absorb the marinade (soy, maple syrup, smoked paprika). Cold smoked (2–3 hours on the cold smoke generator) it becomes firm enough to slice like shop-bought smoked tofu; warm smoked at 60–80 °C it stays more tender. Alder and cherry are flattering, strong beech can overpower delicate varieties.

Vegetable logic: Everything goes on the grate, oiled to prevent sticking, spaced out for the smoke path. The result keeps in the fridge for a few days like grilled vegetables and is the basis for smoked antipasti, soups (smoked tomatoes!) and bowls. If you like, you can cold smoke garlic cloves and chillies alongside – these turn into smoked oil and spice pastes.

Frequently asked questions about vegetarian smoking

Can I smoke vegetables and fish in the same batch?

Yes – vegetables on the lower level so no fish juices drip onto them; the times often match up. A classic: peppers and onions as a side dish underneath the trout.

Do smoked vegetables keep for a long time?

No – they remain fresh produce like grilled vegetables: a few days chilled. Preserved in oil (antipasti style) extends the shelf life slightly; the rules are in the Shelf life table.

Which smoker is sufficient for the veggie kitchen?

Any – even the Smoky 4 with one grate covers family portions. If you are running fish and vegetables in parallel, you will appreciate the levels of the larger models.
