Trout farming: Setting up your own smokehouse

Smoking trout in the fish farm smokehouse in golden smoke

For trout farming, your own smokehouse is the logical next step: the fish is there, the freshness is unbeatable – and processing typically doubles the revenue per fish with material costs under one euro. The choice of equipment depends on the batch size: F4 with 220 fish per run for beginners, F6-100 with 400–420 for farmers' market operations. Exactly this bridge – "from the small farm butchery right through to fish farming" – is the declared field of the Beelonia professional series.

Reading tip: The equipment system with control, smoke generator and HACCP in detail can be found in the professional equipment planning – this is about the special case of fish farming.

F2-70/60 XL 120–130 2,698.92 € Farm sales at the weekend

The slaughter day routine: Slaughter and gut in the morning, straight into the staggered 6% brine (multiple containers, staggered timing), after 8–12 hours – i.e. the next day – dry and smoke in batches. With an F5 and two runs, over 500 trout per smoking day are realistic. The circulation fan (533.12 €) speeds up drying, the smoking trolley (1,163.82 €) makes loading the large chambers easy on your back.

Sales and documentation: From commercial sales onwards, registration, self-monitoring and the cold chain apply – hot-smoked trout are fresh goods (3–7 days at 0–4 °C, longer if vacuum-packed). The PC program control (1,938.51 €) runs reproducible profiles and incidentally provides the temperature documentation for HACCP self-monitoring.

Calculating the profitability

The lever is the processing margin: in direct sales, the price difference between fresh fish and smoked fish is typically a factor of two – with marginal costs for salt, smoking dust and energy under one euro per fish. Added to this are soft factors: smoked fish retains regular customers (the supermarket experience shows exactly the same), utilizes graded goods and makes farm sales a destination rather than a stopover. The equipment is therefore not a cost centre, but the most profitable square metre of the farm – provided the sales channel (farm shop, farmers' market, catering) is in place.

Frequently asked questions about farm smokehouses

Hot smoking or cold smoking on the farm?

The core business is hot-smoked trout; if you farm salmon trout, you can add lucrative cold smoke (smoked salmon style) via the external smoke generator. Both processes run in the same F professional equipment.

Which room is suitable for the smokehouse?

A washable room with exhaust air routing, water connection and cooling facilities – thanks to removable doors and fans, the smokers also fit through 80 cm doors. Details on installation in the equipment planning.

How many hooks do I need?

One hook per fish plus a reserve: so for an F5 run, around 300 hooks – which is why the V2A stainless steel (AISI 304) fish hooks are also available in bulk from Beelonia. Double hooks secure heavy salmon trout from 500 g.

Reading tip: The craft per fish is in the trout guide; the investment is covered in financing smoking equipment.
