Winterproofing & storing your smoker correctly
First, the counter-question: Why winterproof it? Winter is the best time for smoking – cold smoke needs the cold, and the double-walled smoker works reliably in frost. If you still want to take a break, follow the four-point routine: clean thoroughly, dry completely, protect (rain cover, remove electrics, leave the door slightly open), and cover with a breathable material – never with a dense plastic tarp.

Reading tip: The plea for smoking all year round – ham, salmon, cold smoke calendar – can be found in Smoking in winter.
The winterproofing routine
| Step | Why | Effort |
|---|---|---|
| 1 · Deep cleaning | fat and resin residues attract moisture and odours for months | 1–2 h |
| 2 · Drying out | heat up briefly – get residual moisture out before the break | 30 min |
| 3 · Protecting | rain cover on the exhaust, store electric modules dry, door slightly open | 15 min |
| 4 · Covering | breathable cover – plastic tarps create condensation nests | 5 min |

The condensation enemy: It's not frost that damages the smoker, but trapped moisture. Hence the three anti-condensation rules: door slightly open (air circulates inside), exhaust with a rain cover (€43.44) instead of a plug (the smoker 'breathes' through the chimney), and a breathable cover. A roofed spot replaces the cover entirely – the V2A stainless steel (AISI 304) smoker can just stand there as is.
The spring start: After the break, do a quick visual check (seal, throttle valve moves freely, spider webs out of the exhaust), insert the modules, heat up briefly empty – and the first run will go just like in autumn. If you postpone the deep cleaning to spring, just swap the order – the main thing is that it happens once a year.
Frequently asked questions about winterproofing
Can residual water freeze in the smoker and cause damage?
Standing water in trays and gutters can leave frost marks – which is why everything should be dry and empty for the break. The V2A stainless steel (AISI 304) body itself is frost-proof.
What do I do with opened smoking dust?
Store it dry and tightly sealed indoors – a damp winter storage makes dust unusable (white smoke). In spring, check briefly: free-flowing and odourless = good.
Is a smoker heater worth it against moisture?
No – air circulation (door gap, cover) is completely sufficient. The smoker doesn't need electricity during hibernation, only air.
Reading tip: If tiny rust spots do appear: Caring for stainless steel removes them without a trace.
