Calculate the right butchering kettle size

Michael Vering • Updated on 01.08.2026 • 8 min read
Beelonia round multi-fuel butchering kettle in various sizes

The butchering kettle size should be chosen based on the required working volume and not solely on the nominal volume. For conservative preliminary planning, you can assume about two thirds of the nominal volume as usable working volume. Batch size, water requirement, inserts and necessary free space must then be checked based on the actual process.

We at Beelonia GmbH have been manufacturing boiling and butchering kettles for home butchering, clubs and commercial businesses in Beelen since 1880.

At a glance

Nominal volume Planning value for working volume Typical use
100 l approx. 67 l small batches, home butchering
150 l approx. 100 l home butchering, club
200 l approx. 133 l club, farm shop, direct marketing
300 l approx. 200 l direct marketing, butchery
400 l approx. 267 l larger commercial batches

The values are planning figures and not technical filling limits. Goods, water, bottom grid or basket as well as movement during loading may require additional reserve.

How big does a butchering kettle need to be?

A butchering kettle must accommodate the planned batch along with the required water and sufficient working reserve. As a conservative planning value, about two thirds of the nominal volume can be assumed. The final size should only be determined once the goods, water requirement, inserts, loading and necessary free space for the specific process are known.

According to this rule of thumb, a butchering kettle with 150 litres yields around 100 litres of calculated working volume; with 200 litres it is around 133 litres. No kilogram output can be derived from this, because shape, density and displacement differ between sausage, boiled meat and cans.

Planning factor Question to clarify
Batch What is to be processed per cycle?
Water What amount of water does the process require?
Inserts What volume do the basket or bottom grid need?
Reserve What free space is necessary for safe working?

The suitable butchering kettle size within the boiling and scalding kettles results from the entire process. A larger version can avoid additional cycles, but requires more floor space and capital.

Which kettle size suits which application?

Sizes from 100 to 150 litres are more geared towards small batches, while 200 to 400 litres provide more working volume for clubs and businesses. The available range extends from 75 to 3,000 litres in total. Any allocation remains a guideline and must be checked against the actual batch and water requirement.

Size Typical use Suitable models and prices
100 l small home butchering Sheet steel series: starting price from 1,604.12 € (as of 07/2026); Mini series: starting price from 1,804.04 € (as of 07/2026)

The application details are not fixed allocations. A farm shop might be well served with small, frequent batches at 150 litres, while a club might need 300 litres for individual events.

The round wood-fired butchering kettle is available with 150, 200 and 300 litres. Square kettles are available with 150, 200, 300 and 400 litres. Custom sizes can be requested.

Is a round or square butchering kettle better?

Round and square butchering kettles meet different requirements; neither design is fundamentally better. Round multi-fuel kettles are available with 150, 200 and 300 litres, square series with 150 to 400 litres. The decisive factors are heating type, floor space, desired control, outlet position and integration into the existing workspace.

The round multi-fuel kettle combines V2A stainless steel (AISI 304) with fireclay lining, cast iron door frame, safety outlet and temperature display. The outlet side can be chosen on the right or left. Height-adjustable feet help with alignment; wheels are optional.

The square shape offers wood, electric and gas models. In the wood version, the firing area is lined with fireclay and the body is insulated with Vermilite. Electric and gas models feature digital temperature control.

Selection point Round Square
Sizes 150, 200, 300 l 150, 200, 300, 400 l
Heating types Wood Wood, electric, gas
Control Temperature display Digital for electric and gas
Mobility Wheels optional Plan for fixed installation
Outlet Right or left selectable Safety drain of the series

Which heating type suits which kettle size?

Wood is already available for small kettle stoves, while the square electric and gas series start at 150 litres. The electric versions operate with 8 to 12 kW depending on the size. The suitable heating type depends on connected load, exhaust routing, fuel supply, operating procedure and local installation conditions.

Heating type Sizes Requirement
Wood, sheet steel 100–250 l Suitable installation site and exhaust routing
Wood, round 150–300 l Exhaust routing via 130 mm nozzle
Wood, square 150–400 l Exhaust routing via 130 mm nozzle
Electric, square 150–400 l Suitable 400 V connection
Gas, square 150–400 l Gas supply and 130 mm exhaust routing

Gas can suit predictable commercial processes without automatically being the best solution for every frequent use. Propane is provided as standard, natural gas is possible. Running costs depend on local tariffs, fuel procurement, storage and operating effort.

What makes a suitable installation site?

A suitable installation site takes into account energy connection, exhaust routing, stability, operating space as well as safe water and drainage paths. Wood and gas models have a 130 mm exhaust nozzle, electric versions require 400 V. The specific installation must suit the chosen size, local requirements and the operational movement and cleaning processes.

A larger kettle does not only need more floor space. There must be room for loading, emptying and cleaning in front of doors, outlets and controls.

Area To check
Electricity Connection, fusing and power
Exhaust Suitable routing for wood or gas
Water Accessible inlet, optional water inlet
Drainage Safe discharge and accessible safety outlet
Stand Load-bearing, level surface
Movement Workspace; wheels option for the round multi-fuel kettle

Bottom grid, float and water inlet are available via the kettle accessories. The outlet side and media routing should be determined before ordering.

When is an 80–100 l mini kettle sufficient?

A mini kettle is sufficient for small batches, limited space and applications without the features of larger professional kettles. The electric model offers 80 to 100 litres, 8 kW and dimensions of Ø 500 × 800 mm. It only fits if the working volume, 400 V connection and thermostatic control are sufficient for the intended process.

The Mini Kettle Electric is suitable for small home butcherings, club festivals as well as potatoes, pasta or dumplings. The starting price of the series is from 1,804.04 € (as of 07/2026). As a wood variant, the sheet steel kettle stove is available from 100 to 250 litres with a series starting price from 1,604.12 € (as of 07/2026).

The sheet steel kettle stove is one-piece up to 150 litres and two-piece from 175 litres. The option "with outlet" is available. If digital time control, core temperature sensor or 300 to 400 litres are required, these compact models are not a suitable fit.

Which questions help with the final size choice?

The final size choice should consider batch, working volume, heating type, installation site and future use together. Between 150 and 200 litres, there is around 33 litres of calculated working volume according to the two-thirds rule of thumb. The decision must be checked against real containers, inserts and workflows, not against a single litre specification.

Is a butchering kettle with 150 litres sufficient for home butchering?

A butchering kettle with 150 litres can be sufficient if the actual batch fits into the calculated working volume. A conservative planning value is about 100 litres. Water requirement, goods, bottom grid or basket and necessary free space must be considered together; a flat-rate kilogram output cannot be derived from this.

When should I choose a 200-litre kettle instead of 150 litres?

According to the planning rule, a 200-litre kettle offers about 133 litres of usable working volume and thus more reserve. The larger version makes sense if regular batches max out the smaller kettle or if additional cycles are to be avoided. Floor space, energy requirement, purchase and cleaning remain part of the consideration.

May I use the two-thirds planning value as a filling limit?

No. The two-thirds rule of thumb is exclusively a conservative value for size planning and not a technical filling limit. Permissible filling and safe operation depend on the design, goods, inserts and process. The specifications for the chosen model and the operational safety requirements are always decisive.

Are there butchering kettles with more than 400 litres?

The entire range of Beelonia GmbH extends from 75 to 3,000 litres; custom sizes are possible on request. The described square standard kettles are offered with 150, 200, 300 and 400 litres. For larger volumes, batches, media connections, installation space and material flow should be planned together.
