Smoking cabinet vs. BBQ smoker vs. kettle grill: which does what?

The smoker is the specialist for refining (hanging, cold smoke up to 120 °C), the BBQ smoker is the specialist for low & slow cooking (lying down, 100–130 °C, wood fire), and the kettle grill is the generalist with compromises. If you want fish, ham and sausages, you need the cabinet; if you want brisket and ribs in a fire ritual, you need the barrel; if you want a bit of everything, you can live with the kettle – until your appetite grows. By the way, Beelonia GmbH builds both: smokers since 1880 and the BBQ smoker with a smoking tower from the same production facility.

Reading tip: The difference between cold, warm and hot smoking – the basis of this comparison – is explained in our process guide.

The three devices in direct comparison

Criterion Smoker (cabinet) BBQ smoker (barrel) Kettle grill
Temperature range Cold smoke (15–25 °C) up to ~120 °C ~100–130 °C low & slow, also grills hotter ~120–300 °C, indirect from ~110 °C
Cold smoking yes – core competence practically no (firebox heats up too) only with external smoke generator
Hanging smoking (fish, ham) yes – up to 1.8 m hanging height no (lying down) no
Low & slow (pulled pork, ribs) yes, especially electric with control yes – supreme discipline yes, with Minion ring & practice
Steaks & direct grilling no partly (grill grate over firebox) yes – core competence
Fuel Wood, gas or electric (interchangeable) Logs/briquettes Briquettes/charcoal
Effort per session low to medium high (fire management) medium

What makes the smoker unbeatable?

For everything that hangs and needs time: trout and eels on hooks, ham and bacon for weeks in cold smoke, sausages in rows – plus regulated temperatures from drying at 30 °C to cooking at 110 °C. The upright, insulated cabinet keeps the chamber stable, the tiers make quantities plannable, and with a maze smoke generator or smoke generator, it masters the supreme discipline of cold smoke. Even low & slow is a success: pulled pork from the F2-70/60 runs fully automatically for 16 hours at 115 °C.

What does the BBQ smoker stand for? For the American BBQ ritual: wood fire in the side chamber, smoke and heat draw through the horizontal barrel, brisket and ribs cook for hours at 110–130 °C. The Beelonia BBQ smoker (5,880.98 €, incl. smoking tower) combines both worlds: you can also smoke hanging in the tower – the answer from the Beelen production facility to the question "BBQ smoker or cabinet?" for everyone who loves the fire.

And the kettle grill? It remains the all-rounder: direct grilling, indirect cooking, hot smoking with chips over the embers. Its limits: no hanging height, little volume, fluctuating temperatures in the wind – and cold smoke only with an external generator. It is suitable as an introduction to smoking, but as a permanent solution, it frustrates frequent smokers.

The decision in three questions

1. Is the focus on fish/ham or meat BBQ? 2. Hanging or lying down? 3. Ritual or convenience? Fish, ham, sausages and cold smoke inevitably lead to the smoker. Brisket, ribs and playing with fire speak for the BBQ smoker. If you want convenience, choose the regulated electric smoker; if you are looking for the weekend ritual, choose the wood fire. And if you want both, you will find your solution in the BBQ smoker with a smoking tower or in the combination of a kettle grill (summer) and a smoker (year-round).

Frequently asked questions about the device comparison

Can the smoker completely replace a BBQ smoker?

For the result, largely yes – for the ritual, no. Pulled pork and ribs are even more plannable in a regulated smoker; the open play with fire and the grill grate over the embers remain with the BBQ smoker.

Why are Beelonia BBQ smokers so much more expensive than DIY store smokers?

Wall thickness and manufacturing: thin-sheet smokers lose heat, warp and rust quickly – massive barrels welded in Beelen hold the temperature and last for decades. With a BBQ smoker, mass counts double because the fire burns directly inside the device.

What about pellet smokers?

Pellet devices regulate conveniently (±5–10 °C), but are dependent on electronics and require more maintenance – damp pellets block the screw conveyor. If you want automatic control, you get it more robustly and with a cold smoke option in the electric smoker.
